The food was truly delicious. The quality of the noodles was excellent, and the atmosphere was perfect for enjoying a meal. I also really liked their lemonades. I would definitely come back and eat here again.

Good noodle shop on the infatuation list. I gave it four stars because while the noodles were fresh, they were a bit thick for my taste. The flavor of the cumin and lamb was delicious. I love that they have an open kitchen so you can see them hand pulling the noodles.
I went with the lamb soup, less spice.<br><br>Around me, many seemed to favor the dry beef noodles instead—bowls crowned with a full scatter of coriander, giving off that unmistakable, vivid Asian aroma.<br><br>Mine was deeply satisfying—rich, still carrying a gentle heat. It didn’t take long to understand why the place is always packed.
These noodles are amazing! They are hand pulled, soft, and I love the thickness. The cumin lamb pieces were very tender and cooked well. The flavor was amazing, I love the peppercorns, and the portion was perfect for one. Ordering is easy, and since it’s inside Chelsea market there was a lot of seating available.
Very Fresh Noodles—Not Every Long Line is Worth It. This One Is.<br><br>I’ve been to Chelsea Market a few dozen times and that Very Fresh Noodles line was always there to greet me…the kind of crowd that makes you wonder if some celebrity is handing out autographs inside. I always moved on, but this day the line was manageable, so I finally made my pilgrimage.<br><br>Watching those noodle masters work right in front of you is worth the price of admission alone — this place runs like an air traffic control tower, every move calculated and nothing left to chance.<br><br>I bravely tackled the Seaweed Salad first and those long rubbery strips put up a mean fight against my feeble chompers and my chopsticks.<br><br>This experience was more like navigating an obstacle course than a side dish. I did not enjoy the texture of this offering and the spice level was not for the common man.<br><br>Then the La Mei Taiwanese Beef Noodle Soup landed and completely reset the table. Slow-braised beef shanks, hand-pulled noodles, pickled mustard greens, bok choy, scallion — all swimming in one of the most deeply layered broths I’ve encountered in this city.<br><br>This broth has a memory — the kind that stays with you long after the bowl is empty…I found myself slowing down just to make it last. Full stop.<br><br>Some lines in this city aren’t worth the wait. This is not one of them. I would gladly queue up any day of the week and twice on Sunday.
They did not lie about the fresh part. Noodle was bouncy and great texture. Flavorful too! Huge portion.
Fresh Noodles delivers exactly that fresh delicious noodles. Watch them prepare your noodles in front of your eyes while you wait. I tried the "dry" cumin lamb noodles. Chewy texture on the noodles and overall a tasty dish. You may have to look around a bit for seating as Chelsea Market can be busy.

Very Fresh Noodles is awesome. Yes there will be a long line of people waiting, yes make the line, it will be worth it. I had the La Mei Taiwanese Beef Noodle Soup, and it was just delicious! Spicy, beefy, warm and prefect for the cold weather, the noodles are freshly made and they were just perfection. This place is 10/10 when it comes to the food. It will be hard to find a place to sit but again, totally worth the hassle.

Located within the Chelsea Market, this noodle spot is a favourite for tourist and locals alike.<br><br>The Taiwanese beef noodle soup - is indicated on the menu as best seller, and I can see why!<br><br>The soup base is a rich broth full of flavour, it can be ordered mild or spicy. I choose mild and it was spot on.<br>There is plenty of beef and the fresh hand stretched noodles as excellent topped with coriander, and spring onions.<br>Highly recommend!<br>This was a perfect dish.
Holy smokes that was very spicy. They say it in the menu but you don't get to ask for it mild. Most of the options are spicy or make it a soup and it won't be spicy. The cashier said the cucumbers were just a little spicy as were the eggplant... I'd hate to try the spicy if that was "just a little spicy". We couldn't finish the cucumbers or eggplant. The vegan duck soup was delicious! The atmosphere was cool sitting right in front of the guy making noodles. Selection overall is minimal.
These hand-pull noodles are soooo delicious! Of all the tasty food options at Chelsea Market this is one that is definitely worth hitting up. Loved their Spicy Vegan Noodles with Mock “Duck”
Whent on a short food crawl here and I couldnt resist the smells at this place. We ordered the Cumin Lamb Noodles and the fried and glazed Eggplant (cant recall the exact name).<br>The noodles very enjoyable but a tad more spicy than I expected; sauce is well balanced and the noodles were very soft yet bouncy. I enjoyed the food but I wished they had tossed the noodles and the sauce before serving. I frankly did not enjoy the eggplant; which was a shame cause it was fried perfectly but the sauce was too sweet for my liking.<br>Place is a no nonsense place to get a bite so dont expect too much in the way of service or experience.
The meal featured commendable overall quality, highlighted by fresh ingredients and a satisfying amount of meat. Unfortunately, the house-made noodles were the dish's weakest point. They were noticeably undercooked, retaining a raw, 'fresh dough' taste and chewy texture. While I appreciate the labor and visual draw of hand-pulled or hand-made noodles, this undercooking ultimately lowered the standard of the entire dish.
