(that's arugula pesto for the Americans!) 

Makes: approx. 1 cup  Time: 10 minutes


 3 big cups rocket (arugula)

1/2 cup macadamia nuts

2 + tbsp lemon juice

1/4 cup olive oil

salt and pepper to taste


1/2- 1 green jalepeno, de- seeded

1-2 cloves garlic, peeled

MAKE: Throw everything into a food processor (the Cusinart mini prep is perfect for this) and chop until mixed but still a little chunky. Throw more lemon in there if you like it tangy or more jalepeno for a bit of spice. You can serve this as a dip with raw veggies or over brown rice/quinoa and steamed green veg.
