"I don't know if these are an Aussie thing but i feel like i was eating apricot balls way before "balls" became popular. Ha. These little bites of goodness are so easy to throw together and will keep in the fridge forever (unless my husband is around and devours all of them!) and are a great way to satisfy that sweet craving, naturally."
1 cup almond flour
1 cup shredded coconut + extra for rolling
1.5 cups dried apricots
1 tsp cardamom powder
dash of vanilla
2 tbsp coconut oil
pinch sea salt
optional: 2 tbsp raw tahini
- Throw everything into a food processor until smoooth
- Transfer the mix to the fridge for 5-10 minutes to harden a little
- When ready, roll into balls and then through the extra coconut
- Keep in the fridge until ready to serve
