"Watermelons are the essence of summer. Coupled with fresh, in season peaches and a locally made cheese, this dish is a serious winner!"
I N G R E D I E N T S: (serves 2)
2 cups watermelon, diced
2 peaches, diced
2 large handfuls of arugula (1 per person)
handful fetta or goats cheese, diced or crumbled
small handful pistachios, crushed
D R E S S I N G:
1 tbsp lime juice
1 tsp honey
1/4 cup olive oil
pinch sea salt
- In a small jar or glass mix the dressing ingredients together, adding more honey or lime to your taste.
- Divide the salad ingredients evenly into 2 serving bowls or plates.
- Drizzle the dressing over the salad and serve immediately. Adding a tiny bit of cracked pepper to taste.
