"Nothing screams summer like grilled corn on the BBQ. And, in my opinion, corn just isn't the same without a little butter! Play around using different herbs or even just a simple chive or scallion butter. OR if you're after a super spicy twist, a mix of chopped herbs and cayenne pepper/ fresh red chills works well too."
I N G R E D I E N T S: (serves 4)
4 ears corn, shucked
1/2 - 1 jalepeno, finely diced
small handful cilantro, finely chopped
1/2 stick butter (about 4 tbsp) ROOM TEMPERATURE
juice + zest of 1/2 lime
pinch of sea salt
- Throw all ingredients into a bowl and mix together with a fork or spoon. It is essential that the butter is a room temperature so you are able to do this. Set aside.
- Grill corn on the BBQ
- Serve corn with a nice smear of butter and some cracked pepper.
