"Fish tacos are another one of my favourite summer meals. They are so easy to put together and a fun thing to enjoy with friends as all you have to do is put the options in the middle of the table and everyone makes their own! There are so many different options when it comes to tacos but for me, the fish + tropical salsa version is the best! And substituting the taco shell for a lettuce leaf keeps things super clean so you can eat as many as you like without feeling terrible.
You could try using pineapple instead of mango and maybe even switching the cilantro for mint. If you like a bit of spice, add a jalepeno in there too. Delish! I used a local fluke for these ones and pan fried it in a little olive oil to make it crispy but you could use a heartier fish that doesn't fall apart, like halibut, and grill it on the BBQ instead."
I N G R E D I E N T S: (serves 2 - 4)
1 large head lettuce, butter or bibb are perfect
2 pounds fish of choice (generally it's about 1/2 pound per person but you can always grab extra as these guys are pretty moorish!)
salt + pepper
S A L S A:
2 avocados, diced
2 mangos, diced
2 fresh corn on the cob, shucked and either grilled on the bbq whole and then the kernels removed, or remove the kernels raw
1/2 red onion, diced
1/2 bunch+ cilantro, roughly chopped
G U A C A M O L E:
2 large avocados
1 cup sungold, cherry or heirloom tomatoes, diced
handful of shallots or 1/2 white onion, finely diced
1/2 bunch cilantro, roughly chopped
1/4 cup lemon juice
salt + pepper
- In a medium bowl, throw all of the salsa ingredients together and season with salt and pepper. Taste test, add whatever you think it needs and then set aside.
- In another medium bowl, throw all of the guacamole ingredients together and "mash" with a fork. Or you can cheat and throw the avocado into a food processor which i sometimes do if i'm feeling super lazy! Then add the rest of the ingredients, taste testing and seasoning with salt and pepper.
- Pan fry or BBQ the fish.
- Peel individual lettuce leaves from the head of lettuce, wash and then dry by placing them between a tea towel and pressing out the water.
- To serve: Place one lettuce leaf on a plate, add guacamole, fish and salsa. Fold together and enjoy!
