"This is one of the easiest and most delicious combination of flavors to put together. You can find the hot salmon at the seafood counter in your local supermarket or pre-packaged with the regular smoked salmon. The crispiness of the apple and radish with the tartness of the orange and lemon is a fall salad combo at it's finest!"
I N G R E D I E N T S: (serves 2)
2 pieces hot smoked salmon, skin removed
2 big handfuls arugula
6 -8 radishes, finely sliced into matchsticks
1 apple, cored and sliced
1/2 an orange, peeled and sliced
1 cucumber, sliced or diced
D R E S S I N G:
juice of 1 orange
juice of 1 lemon
1/4 cup olive oil
salt + pepper to taste
*option to add a shallot, finely diced
- In a small bowl or jar whisk together the dressing ingredients, seasoning with salt and pepper and adding more orange or lemon to suit your taste buds
- In a large bowl toss the dressing together with the arugula, radish, apple, orange and cucumber.
- Serve plated or in a bowl with the salmon on top, either as a whole piece or crumbled as shown.
